Things I Love: Frozen Diced Grilled Chicken

Maybe someday I’ll post about something deep and meaningful.

I could post about what God’s been teaching me lately about leaving my fear in His hands.

I could post about the trials and triumphs I’ve found in parenting.

I could post about my trip to the ER yesterday after I bumped my head.

But I don’t feel like it (I’m OK, by the way).

Today I’m going to post about Frozen Diced Grilled Chicken.

Because to this busy mommy, who is openly open to finding shortcuts to cooking, this IS meaningful to me.

Seriously, so many meals that I like to make call for diced, cooked chicken breasts — which, up until now, meant that I had to add the extra steps of cooking and dicing the chicken — BEFORE I made the meal. Not to mention the thawing of the chicken that had to take place before the cooking of the chicken did.

I know, I know…cooking chicken breasts isn’t super HARD. But it’s an extra step in the cooking process, and…I’m going to be honest. I don’t always like cooking. Sometimes, for fun? Yes. Every single day out of sheer necessity when there are a million other things to do? Not so much.

So you can imagine what a (moderately) big deal it was to me to discover this at Target a couple weeks ago.

I am in love with this product.

Suddenly chicken pot pie is SO much easier. So is Chicken pasta and…well, anything else that involves cooked, diced chicken! Someone’s already cut & cooked the chicken for me — yay!

And…I don’t know what else to say. I just really like this invention and I thought you might too.

And it’s a good thing.



Fun Little Surprise

Look what I got today:

Isn’t it adorable?! My friend over at Threaded Basil sent it over. She made it herself! She makes lots of these kinds of dollies — in all kinds of sizes, colors and pretty patterns. I’ve been eyeing them for a long time, so imagine my delight to finally have one of my very own. I love fall. The crispness in the air. The colors. I once heard someone say that she thought it was a very “romantic” time of year (which I’d have to agree with, since I ended up meeting my husband in the fall)!

It was three years ago this month that we moved into our home. I immediately set to work in decking it out for the fall. Here’s what our house looked like that year:





Looking at these pictures makes me want to get back in the habit of being a bit more festive in my fall decorating this year. With two little ones scooting around, it may take a slightly different shape (probably will steer clear of glass vases full of flowers in the living room…and it’s a little trickier to transport bales of hay with a trunk full of strollers and a backseat full of carseats :)), but hopefully I’ll come up with an idea for a fall centerpiece for our table or something.

Mostly I’m excited to sip warm beverages, read lots of books with my kids, take some walks in the leaves and just enjoy it all.

Things I Like: The Lil’ Rinser

A few weeks ago I noticed a product in the baby department at Target, and instantly knew I needed it. It was 9.99, but I didn’t care. I knew that it would be worth every penny.

It was.

What product, you might ask? Why, the Lil’ Rinser (or, as W affectionately calls it, “Bath Hat”).

Suddenly bath time isn’t quite so stressful for any of us.

Yay! 🙂



Hi? Remember me?

Anyone still here? Testing 1-2-3…?

Returning to blogging after long stretches of absence is always awkward. I’ll do it simply by offering the short version of my summer — the lowlight and two (very precious) highlights:

The lowlight was the illness and subsequent loss of my sweet grandma in July. It was so hard to say goodbye. She was a precious, special lady who we miss dearly and can’t wait to meet in heaven again.

The highlights were our two precious little ones. I can’t believe how fast they are growing — and how busy they are keeping me. W just turned 2 last week and is very much…2! Suddenly he’s speaking in full sentences and even coming up with witty little comments!

S is almost 6 months old and is a dark haired, brown eyed beauty with chunky little legs and sweet little dimples. I defy anyone to resist the cuteness of her puppy dog eyes — especially when she smiles! She is a doll (if I do say so myself).

Needless to say, 2 kids under 2 keep me very busy, so while I will continue blogging from time to time, from here on out they may be rather short.
